Ingredients
- 4 quarts water
- 1 cup sugar
- 10 teabags of your choice (black tea, green tea, red tea, or a combination)
- 2 cups kombucha (store bought)
- 1 scoby*
- Fruit and herbs (optional)
- 10 mL Bees Knees Oil Tincture Drops
Directions
- After boiling the water, remove from heat and stir in the sugar until completely dissolved.
- Add the teabags to the water, stepping until the water cools (depending on the size of your pot, this can take several hours).
- Remove the teabags when the tea has cooled and stir in the kombucha (store bought).
- Pour the tea and kombucha mixture into a 1-gallon glass jar and add the scoby.
- Use several layers of a tightly woven fabric, coffee filters, or paper towels to cover the jar, securing it with a rubber band.
- Store the jar at room temperature for a week to 10 days, keeping it out of sunlight. Periodically check on the kombucha and scoby during this time but try not to disturb the tea. The scoby will typically float to the top or the bottom of the jar. You should see a new layer of scoby with bubbles surrounding it start to form.
- Start taste-testing your kombucha a week into fermentation. It is ready to be bottled if the sweetness and tartness is to your liking. Allow the kombucha to continue to ferment if it is not ready.
- Reserve 2 cups of kombucha as your next starter if you plan to brew another batch.
- Using a funnel to prevent spilling, pour the kombucha into glass bottles or jars. Add fruit and herbs if desired, leaving at least 1 inch of space between the kombucha and the lid.
- Store your kombucha for 1 to 2 days at room temperature to allow it to carbonate.
- When the kombucha is carbonated, refrigerate the bottles. The kombucha will last up to 4 weeks in the refrigerator.
- When serving the kombucha, add Bees Knees Oil Tincture Drops.
- Enjoy!
* SCOBY is an acronym for “symbiotic culture of bacteria and yeast” that is formed after the fermentation process of yeast, lactic acid bacteria, and acetic acid bacteria to produce sour beverages like kombucha and kimchi.
